Ingredients:
1/2 cup unsweetened applesauce
1/2 cup melted chocolate chips (use dark chocolate or sugar-free if preferred)
Instructions:
Mix the base
In a bowl, combine the peanut butter protein powder and applesauce. Stir well until a thick, dough-like consistency forms. If it's too dry, add a tiny splash of almond milk; if too wet, add a bit more protein powder.Shape the truffles
Roll the mixture into small bite-sized balls using your hands. You should get around 8–10 truffles, depending on size.Melt the chocolate
In a microwave-safe bowl, melt the chocolate chips in 20–30 second increments, stirring between each, until smooth and glossy.Dip and chill
Dip each truffle into the melted chocolate to fully coat, then place them on a parchment-lined plate or tray. Once all are coated, pop them in the fridge for about 20–30 minutes to set.
